Lomper (or potato lomper) are a traditional, thin, and soft Norwegian flatbread made primarily from boiled, mashed potatoes, flour (wheat/rye), and salt, and fried on a griddle. They are round, about 20 cm in diameter, and are most often served as a side dish with sausages, or with toppings such as butter and sugar, smoked salmon, or cheese.
