Unsmoked "pinnekjøtt" is traditional, salted and dried mutton or lamb with a pure, concentrated flavour of lamb and curing, without the taste of smoke. It is often considered the mild classic, with a natural, strong flavour and good marbling of fat which provides juiciness.
